Tofu Scramble – Quick and Easy Vegan Egg Replacement

Tofu Scramble is a healthy and delicious vegan alternative to scrambled eggs. You are going to be surprised by how easy and quick it is made.

You do not like tofu? Give this recipe a try! I’m sharing the tricks I use to make you forget that you are using tofu taste and consistency wise. Other than the many recipes out there this one requires for a blender. But don’t worry, you don’t need a high speed blender since tofu is really soft. Even a hand-held blender would do. If you don’t have that either, still no problem. Just mash the tofu with a fork in a bowl, add the oatmilk and mash until everything is well combined.

Will it taste like eggs? No, (and I actually like that fact). But it is a great savoury vegan breakfast alternative that also comes with a respectfully amount of protein, too. To make it actually taste more like eggs you optionally could add black salt, also known as kala namak. But you definitely don’t need kala namak to get a delicious tofu scramble.

Yields1 Serving
 1 Block of Tofu (200g)
 ¼ cup Oat Milk (or any other plant milk)
 1 Green Onion
 1 cup Cherry Tomatoes
 1 tsp onion powder
 1 tsp garlic powder
 1 tsp tumeric
 1 tsp salt
 ½ tsp kala namak (optional)
 1 tbsp coconut oil (or other vegetable oil)

Place the Tofu, Oatmilk and spices into a blender and blend until everything is smooth and combined.

Chop the green onion and tomato.

Add the oil into a pan on high heat. Once it is hot pour the chopped green onion inside. Sauté it for a few seconds.

Then add the Tofu mixture and immediately start scrambling it. Continue for a few minutes to dehydrate the mixture until it has the consistency you desire.

Lastly add the tomatoes and serve.
