Roasted Fennel

The best roast you will ever receive: This delicious vegan roasted fennel! This recipe is an absolute allrounder. There are so many options to serve this dish, from having it as a side at a fancy dinner to topping off a salad to add extra crunch. It is not only easy to make but super healthy too!

Fennel is one of the most underrated vegetables. Some sources claim that fennel helps with gut issues/digestion, lactation and may even be anti-inflammatory. But even without those benefits, it is a vegetable packed with a lot of vitamins and minerals as well as fiber. Enough reasons to incorporate it into your meal plans more often!

This recipe is a great way to introduce fennel in a whole different way to yourself than you might have experienced in the past. Roasting it does not only make it super crunchy but enhances the flavors of this dish. I love to combine it with a big green salad and my walnut vinaigrette. You can adjust the texture as you desire it by varying the baking time. If you prefer it super soft just steam the fennel stripes for a few minutes before you coat them with the other ingredients. Then bake it for 20 minutes.

 2 Fennel bulbs
 1 clove of Garlic
 1 tbsp dried Italian Herbs
 2 tbsp Olive Oil
 Salt
 Pepper

Preheat your oven to 375°f (180°c). Wash the fennel bulbs, cut them in half and then into smaller slices.

Pour the slices into an oven dish and add all the other ingredients. With your hands massage the fennel slices so every slice is coated with oil and spices.

Lay the slices as separately as possible to achieve a maximum of crunchiness. Put the dish into the preheated oven and let the fennel roast for 30-40 minutes.

Before removing the dish, check the consistency of the fennel with a fork. When it is as you desire it, remove the dish from the oven and serve.
